Instructions

- Cook the onion and peppers. Preheat the air fryer to 425°F. Starting with a fully preheated air fryer helps the tortillas crisp immediately instead of drying out slowly. Heat a skillet over medium heat. Add the diced onion and pepper and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened, slightly translucent, and fragrant. They should be tender but not browned.

- Add the chicken and spices. Add the diced chicken and spices to the skillet. Cook for another 3-4 minutes, stirring frequently, until the chicken is fully cooked through and lightly golden on the edges. The chicken should be opaque and no longer pink, and the spices should evenly coat each piece.

- Sprinkle the tortillas with cheese. Place the tortillas on a flat surface. Sprinkle a thin, even layer of cheese over half of each tortilla, making sure it reaches close to the edges to help seal the quesadilla.

- Add on the chicken and sprinkle on a top layer of cheese. Divide the chicken and vegetable filling evenly over the cheese, then top with another light layer of cheese. Fold each tortilla in half and press down gently but firmly so the tortilla lies flat and holds its shape.
- Air Fry. Lightly spray the air fryer basket or tray with olive oil spray. This prevents sticking and helps the tortillas develop a golden, crispy exterior. Place the quesadillas in the air fryer in a single layer, making sure they are not overlapping. Air fry for 3 minutes, until the bottom becomes lightly golden and firm. Carefully flip each quesadilla using tongs or a spatula, then cook for another 3-4 minutes, until both sides are golden brown and crispy and the cheese inside is fully melted. The tortillas should feel firm to the touch and hold their shape when lifted.
- Serve. Remove the quesadillas from the air fryer and let them rest for 1-2 minutes. This allows the cheese to set slightly so it doesn't spill out when sliced. Serve warm with pico de gallo, guacamole, and hot sauce.

Tips for the Crispiest Chicken Quesadillas
- Always flip halfway through cooking. This ensures both sides develop an even, golden, crispy exterior. When I tested air fryer quesadillas without flipping, the bottom became crisp while the top stayed soft and pale. Flipping allows the hot circulating air to reach both sides evenly.
- Do not overfill the quesadillas. It can be tempting to add extra filling, but too much prevents the tortilla from sealing properly. - Grate your own cheese. Instead of buying pre-shredded cheese, opt for grating it yourself from a block of cheese. Pre-shredded cheese is made with an anti-caking agent to help prevent the cheese shreds from sticking together which prevents the cheese from melting as well as it would without the anti-caking agent. Grate the cheese yourself for the best melted quesadillas.
- Test how pliable your tortillas are. If you use flour tortillas, they should fold easily without any ripping. If you use a gluten-free tortilla or another alternative tortilla, it may rip when folding if it is not warmed up first. Check if you need to warm up your tortillas first before filling to prevent any rips!
