Peel and cut carrots into even matchsticks and add them to a large bowl. Try to keep them similar in thickness so they cook evenly. Add finely minced garlic cloves to the bowl with the carrots. Drizzle olive oil over the carrots, then add salt, black pepper, and rosemary. Toss everything together until the carrots are evenly coated. The carrots should look lightly glossy, not dry or dripping with oil.
