This crispy panko air fryer haddock is tender inside, golden outside, and ready in just 20 minutes. Panko breadcrumbs give a light, crunchy coating that holds up beautifully in the air fryer. It's perfect for an easy weeknight dinner, fish sandwiches, or a fresh twist on fish and chips.

NOTE: This recipe was previously shared as a beer-battered haddock. While delicious, I found panko gives a crispier, more consistent coating in the air fryer. If you loved the old version, you can grab the printable PDF here.

Key Ingredients

- Haddock fillets. Mild white fish that gets flaky and tender in the air fryer. Cod works as a substitute, or try my crispy pan-seared panko cod.
- Panko breadcrumbs. Give the coating that extra light, crispy texture. You can use regular breadcrumbs if needed, but the crust won't be as light and golden.

Instructions
In a shallow bowl, combine flour, salt, pepper, paprika, and Italian seasoning. Whisk eggs in a second bowl. Place panko breadcrumbs in a third.

Step 1: Pat the fish dry using clean paper towels, then dip the fish into the flour and spice mixture, coating it evenly on both sides.

Step 2: Next, place it into the whisked eggs and coat on all sides.

Step 3: Transfer the fish to the bowl of panko. Lightly press down to coat on all sides.

Step 4: Place the haddock in the air fryer basket or tray. Lightly spray with cooking spray. Cook for 10-12 minutes, flipping halfway. When ready, the haddock will be golden brown on the outside and flaky in the center.
Sarah's Top Tips
- Don't overcrowd the air fryer. Work in batches so the hot air circulates evenly.
- Dry the fish well with paper towels to help the breading stick.
- Use cooking oil spray. A light mist helps the panko crisp up and turn golden brown.

Serving Suggestions
This air fryer haddock is great served with your favorite frozen shoestring fries or potato wedges, as a fish sandwich with coleslaw and tartar sauce, as fish tacos with mango avocado salsa or as a tasty appetizer with your favorite dipping sauces.
Storage and Reheating
- Fridge: Store leftover fish in an airtight container for up to 2 days.
- Reheat: Air fry at 350°F for 3-4 minutes to restore crispiness.
- Freezing: I don't recommend it, as panko softens after thawing.

- 4 haddock fillets, about 1-1.5 lbs total
- ½ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- 2 eggs, whisked
- 1 cup panko breadcrumbs
- Oil or cooking oil spray
- Lemon wedges, for serving
- Fresh parsley, chopped, for serving
Instructions
- Preheat the air fryer to 400°F.

Sarah's Tips
- Don't overcrowd the air fryer; cook in batches if needed.
- Thicker fillets may need an extra 1-2 minutes of cooking time.
- Cooking oil is key for browning the panko evenly.

Sarah, I would like to try this recipe for batter fish but we are not beer drinkers. What other liquid could I use?

Hi Marie, I haven't tried it but unflavored club soda should be a good substitute.

Disappointing. The 8oz. of beer left the batter with a consistency of pizza dough. A lot more liquid is required. After cooking to 15 minutes the fish batter still did not brown up.

Hi Dan, so sorry this recipe didn't come out right for you. The 8 ounces of beer was enough liquid for me but I will test the recipe again soon to see if it should be tweaked. The fish may need to be cooked longer than 15 minutes depending on each individual air fryer model. Again, sorry to hear you had some issues.
