These Lemon Chia Seed Baked Donuts are soft, fluffy and super easy to make. They are drizzled with a lemon glaze and packed with fiber from the chia seeds!
I love making baked donuts because they are a little more fun than just making muffins. I use these donut pans and I love that they are silicone, which makes them nonstick and lightweight.

Ingredients in the lemon chia seed baked donuts
Typically you will see the combo of lemon and poppyseeds in muffins or donuts. However, I replaced the poppy seeds with chia seeds here to add some fiber and Omega-3 fatty acids. I also used the following ingredients:
- Flour- you can use all-purpose or gluten-free all purpose flour (I use Bob's Red Mill)
- Lemon zest- zest from one large lemon
- Lemon juice- depending on the size of the lemon, use juice from half or the whole lemon
- Honey- you can also sub maple syrup here
- Yogurt- I used coconut yogurt here but you can replace with Greek yogurt
How to make the donuts
All you do is combine the wet ingredients in one bowl and the dry ingredients in another bowl. Then, add the wet ingredients to the dry ingredients and mix together. Finally, fold in the chia seeds, pour batter into your donut pans and bake.
I also made a glaze for these donuts, but this is optional. It is super simple to make. All you do is combine powdered sugar with lemon juice and heat on the stove for 1-2 minutes. You can drizzle the glaze or dip the donuts right into it for a more traditional glazed donut look.
How to store the donuts
Store these in an air-tight container on the counter for 1-2 days, in the fridge for up to a week or in the freezer for a few months.

Lemon Chia Seed Baked Donuts

Ingredients

- 1 ½ cups all-purpose or gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 lemon, zested
- ½-1 lemon, juiced
- ½ cup honey
- ½ cup coconut or Greek yogurt
- ¼ cup coconut oil, melted
- 2 eggs
- ⅓ cup milk of choice
- 2 tablespoons chia seeds
Glaze (optional)
- ½ cup powdered sugar
- ½ lemon, juiced
Instructions

- Preheat oven to 350 degrees F and grease 2 donut pans with cooking spray.
- Combine all of the dry ingredients in a large bowl. Mix together wet ingredients in a medium bowl.
- Add wet ingredients into the dry ingredients and mix until combined. Stir in the chia seeds.
- Evenly distribute the batter throughout donut pans.
- Bake for 20-25 minutes or until a toothpick comes out clean.
Glaze
- Combine the glaze ingredients in a small saucepan. Heat on low until combined, just 1-2 minutes.
- Drizzle on top of the donuts and enjoy!
