Monday: Chicken Milanese with Burrata
This one is worth starting the week with. Thin chicken cutlets get dredged in seasoned panko and pan-fried until golden and crispy, then served over a simple arugula salad with halved cherry tomatoes and big creamy burrata on top. A drizzle of balsamic glaze finishes it. It looks like something you'd order at a restaurant and takes about 30 minutes start to finish.
Tuesday: Sausage and Peppers Pasta
Italian sausage, sliced bell peppers, onion, garlic, and marinara sauce all go into one pan, then toss with penne or rigatoni and some reserved pasta water to bring it together. Fresh basil and Parmesan on top. The whole thing is ready in 40 minutes and it's the kind of dinner that disappears fast.
Wednesday: Easy Baked Halibut with Tomatoes
Halibut fillets and asparagus go on a sheet pan with cherry tomatoes, garlic, olive oil, lemon, and a little fresh dill, then bake together until the fish is flaky and the tomatoes are just starting to burst. Sheet pan dinners mid-week are a lifesaver - 30 minutes, minimal cleanup.
Thursday: Peanut Sauce Stir Fry
Chicken, red pepper, broccoli, and onion in a homemade peanut sauce made with peanut butter, coconut aminos, sesame oil, garlic, honey, and lime. Everything cooks in one skillet in about 30 minutes. Serve it over rice and the sauce soaks right in. If you love takeout peanut noodles, this is the weeknight version of that.
Friday: Korean Beef Tacos
Toss the steak in its marinade before work - coconut aminos, garlic, ginger, brown sugar, and sriracha - and by dinner you're just 10 minutes from taco night. Sear the steak strips until caramelized, toss a quick spicy coleslaw, and pile it all into warm tortillas with avocado and cilantro. These are in heavy rotation at my house.
