My husband is a huge fan of mezcal and usually drinks it in margarita form. This mezcal cocktail is a great alternative to a classic margarita by omitting only the orange liqueur.
This mezcal sour recipe is the perfect blend of smokiness, the tartness of fresh lime juice and sweet agave. Egg whites are used in the traditional methods to produce a classic foamy top, but this recipe has only 3 simple ingredients.
The secret to a sour cocktail with or without the egg whites is to shake twice. The first shake is called a dry shake, which is done without ice and allows the ingredients more time to aerate, producing a foamy texture. The second shake is done with ice to chill the cocktail.

What is Mezcal?
Mezcal is a traditional Mexican spirit with a rich cultural heritage and a distinctive smoky flavor. Made from the agave plant, particularly the agave espadin variety, mezcal is crafted through a meticulous process that involves roasting the agave hearts in underground pits, fermenting the cooked agave pulp, and then distilling the resulting liquid. Unlike its cousin tequila, which is made primarily from blue agave in specific regions of Mexico, mezcal can be produced from various agave species and is often associated with artisanal production methods
🥘Ingredients
- Mezcal. This agave-based liquor is smoky and smooth. Any 100% agave mezcal will work. We usually have Ilegal Mezcal in our house.
- Simple syrup or agave. I prefer blue agave nectar which can be found at any grocery store or making my own simple syrup.
- Lime juice. Fresh lime juice as the sour component.

📖Substitutions & Variations
- Add egg white. Add 1 egg white to the recipe to add a creamy texture and white foam. Cocktail foamer can also be used to achieve the same frothy texture.
- Sweetener. If you don't have agave you can use simple syrup or maple syrup.
- Fresh citrus juice. Fresh lemon juice can be used instead of lime juice.

🔪Instructions
Step 1: Add your 3 ingredients to a cocktail shaker and shake long and hard for 15 seconds. Add your ice to the shaker and shake again for 10 seconds.
Step 2: Strain into a chilled coupe glass, mason jar or rocks glass, garnish with a lime wedge or lime twist. Enjoy!

- 1.5 ounces simple syrup or agave syrup
- 2 ounces fresh lime juice
