Notes
Use fresh citrus juice. Freshly squeezed lime or lemon juice is essential for the sour component of the drink.
Sweetener Choice. Opt for simple syrup or agave nectar as your sweetener. These options provide the necessary sweetness without altering the flavor profile significantly.
Balance Flavors. Experiment with the ratio of citrus juice to sweetener to achieve the desired balance of tartness and sweetness. Start with equal parts and adjust according to taste.
Select quality mezcal. Choose a high-quality mezcal with distinct smoky and agave flavors.
Shake vigorously. Shake the ingredients vigorously, twice, with and without ice to chill the drink and create a frothy texture without the need for egg white. This step is crucial for achieving the desired consistency.
Experiment with bitters. Consider adding drops of Angostura bitters, to elevate the flavor complexity of your mezcal sour without relying on egg white for texture.
