🥘Ingredients and Substitutions

- Bell peppers. I use red bell peppers and green peppers for this soup but yellow or orange will also work if you have those on hand already.
- Ground turkey. You can also use ground chicken, lean ground beef or ground pork. Any ground meat will work for this recipe.
- Broth. Chicken broth, veggie broth or beef broth will all work in this soup.
- Rice. You can use white rice, brown rice or even cauliflower rice.

🔪Instructions

Step 1: Begin by cooking the rice according to the package directions and set it aside. Heat olive oil in the Instant Pot over high heat. Once hot, add the ground turkey to the pan and brown it for 6-8 minutes.

Step 2: Turn off the pot and add in the diced onion and bell peppers. Stir in the remaining ingredients, aside from the rice, scrape any browned bits off of the bottom of the pot and close the lid.

Step 3: Set to pressure cook on high pressure for 10 minutes.

Step 4: Allow pressure to come down naturally for 5 minutes. Release the remaining pressure manually and stir in the rice. Serve and enjoy!

Yes! Sauté the vegetables and brown the ground turkey before slow cooking. Then, add all of the ingredients, aside from rice into the cooker and stir. Slow cook on low for 6 hours or on high for 3-4 hours. Cook rice according to package directions and add to the soup just before serving.
Yes, just don't add the ground turkey, and be sure to use vegetable broth and this recipe will be vegetarian. You may want to add a can or two of beans in place of the turkey.
Yes! This recipe is perfect for meal prep. You can prepare it on Sunday and enjoy it all week long for lunch or dinner. Similar to most soups, this one continues to develop flavor over time and is usually better the next day.

Ingredients
- ¾ cup uncooked white rice
- 1 ½ cups water
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- ½ teaspoon salt
- black pepper, to taste
- 1 teaspoon chili powder
- 2 teaspoons paprika
- ½ teaspoon cayenne pepper
- ½ teaspoon oregano
- 1 (15 ounce) can of diced tomatoes
- 1 (15 ounce) can of tomato sauce
- 4 cups chicken broth
Instructions
- Begin by cooking the rice according to package directions and set aside.
- Heat oil in the Instant Pot over high heat. Once the oil is hot, add the ground turkey to the pan and brown, while crumbling for 6-8 minutes. Turn off the Pot.
- Add the diced onion and bell peppers. Stir in the minced garlic, salt, black pepper, chili powder, paprika, cayenne and oregano.
- Pour in the can of diced tomatoes, can of tomato sauce, and chicken broth.
- Close the lid. Set to pressure cook on high pressure for 10 minutes.
- Allow the pressure to come down naturally for 5 minutes. Release the valve, stir in the rice and enjoy!
