These crispy Air Fryer Hasselback Potatoes are easy to make. They are the perfect side dish to accompany any meal and can easily be customized with your favorite toppings!

Instructions
Wash and dry the potatoes. Cut the potatoes into ⅛-1/4 inch slices. Place two chopsticks on a cutting board and place a potato on top and slice. The chopsticks will prevent you from cutting through the potato. (See the video below).
Preheat the air fryer to 350 degrees F.
In a small bowl, combine the oil or butter, salt, pepper, garlic powder and herbs. Brush the mixture over the potatoes and in between the slices.
Place the potatoes in the air fryer and cook for 30-40 minutes until tender and golden. Let cool for a few minutes and serve. *Check the potatoes at 20 minutes and brush with more olive oil if needed.

I highly recommend using russet potatoes for this recipe. Golden or red potatoes will also work but russet potatoes will be much crispier.
If you want more flavor or crispiness, save some olive oil and spice mix and baste the potatoes halfway through their cooking time.
To speed up the cooking time, pre-cook the potatoes in the microwave for 5 minutes then air fry the potatoes for about 20 minutes.
Store leftover hasselback potatoes in an airtight container in the fridge for about 3 days. You can reheat in the air fryer or oven at 350 degrees F for 5-10 minutes.
