This bright summer salad combines sweet strawberries and juicy tomatoes with a light shallot vinaigrette. It's fresh, fast, and perfect for warm-weather dinners or backyard cookouts. Serve it as a side, appetizer, or build it into a full salad with greens and grilled chicken.
Add all of the ingredients to a medium-sized bowl. Mix ingredients together using a large spoon, being gentle not to squish the strawberries or tomatoes.
1 pint cherry or grape tomatoes, 1 pound strawberries, 1 shallot, ½ lemon, 1 tablespoon extra virgin olive oil, 1 teaspoon salt, ½ teaspoon black pepper, 2 tablespoons fresh parsley
Serve the salad on its own or as a side dish. Enjoy!

Notes
Use the ripest strawberries and tomatoes you can find. That's what makes the flavors of this salad work.
Toss gently so the fruit stays intact and doesn't get mushy.
Serve within a few hours of making for the best flavor and texture.
You can enjoy this a few days after making but the strawberries and tomatoes will be soggy.
