This Ground Chicken Taco recipe combines simplicity with versatility. It's perfect for busy weeknights and made in just 25 minutes. The recipe features lean ground chicken seasoned with a homemade taco spice blend, fresh guacamole, and your favorite toppings!
Heat olive oil in a skillet over medium-high heat. Add the ground chicken and brown while crumbling for about 7-8 minutes. Drain the excess fat from the pan.
Add the spices and tomato paste to the pan and simmer for about 5 minutes.
While the chicken is cooking, make the guacamole by adding all of the ingredients to a bowl. Use a fork or potato masher to mash the avocado and mix everything together.
Heat the tortillas over an open flame for about 30 seconds per side. Alternatively, you can heat them in a lightly oiled skillet over low heat for about 30 seconds per side.
Assemble the tacos by adding lettuce to each tortilla, followed by the chicken, salsa and guacamole.
Serve topped with chopped cilantro and lime wedges on the side.
Notes
Char the tortillas. Heating tortillas prevents them from cracking and my favorite method is charing them on the stovetop over an open flame!

To freeze leftovers, place them in a freezer-safe bag or container and consume within 2-3 months. Defrost overnight in the refrigerator and reheat using the above methods.
