This sausage and vegetable sheet pan dinner is easy to make, flavorful and is done in just 30 minutes! This recipe is perfect for meal prep also.

Ingredients

  • 1 package Italian chicken sausage pre-cooked
  • 1 red onion chopped
  • 1 red pepper chopped
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Slice the sausage into 1-inch rounds. Add the sausage to a sheet pan with the chopped onion, red pepper and broccoli florets.
  • Drizzle everything with olive oil and season with garlic powder, salt and pepper. Toss everything to coat with olive oil and spices.
  • Bake for 20 minutes, flipping halfway through. Serve with rice, quinoa or roasted potatoes. Enjoy!
