Air Fryer Roasted Sweet Potatoes

These Air Fryer Roasted Sweet Potatoes are cut into cubes and are finished in just 25 minutes! They are soft on the inside, crispy on the outside and simply seasoned. Pair this easy side dish with breakfast, lunch or dinner.

Equipment

Ingredients

  • 3 medium-sized sweet potatoes
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1-2 tablespoons olive oil

Instructions

  • Peel (optional) and dice the sweet potatoes into ½ inch pieces.
  • Preheat the air fryer to 400 degrees F.
  • Add the potatoes to a large bowl and add the salt, smoked paprika, black pepper, garlic powder and olive oil. Toss the potatoes to coat with the seasonings and oil.
  • Place the potatoes in a single layer of the air fryer (cook in batches if needed) and cook for 15-20 minutes until slightly browned on the outside and soft in the middle.
  • Serve as a side with your favorite meal.

Notes

  • Peel the potatoes using a vegetable peeler or a very sharp knife.
  • The cooking time can vary depending on your air fryer basket and how thick you've cut your potatoes. If you've cut your potatoes larger than ½-inch thick, a longer cook time should be expected. Similarly, if your air fryer tends to run hot, they may be ready after just 15 minutes. Adjust the cooking time as needed.
  • For best results and proper air circulation, avoid piling layers of potatoes in the air fryer basket. For the best, crispy sweet potato cubes, I recommend cooking in a single layer and cooking in batches as needed.
  • Store leftovers in an airtight container for 3-4 days in the fridge.
  • You can freeze the sweet potatoes for up to 3 months. Just make sure they are cooled completely before freezing.
  • The best way to reheat these potatoes is to place them back in the air fryer basket and cook at 350 degrees F for 5-10 minutes, or until sufficiently warmed through again.
  • Leftover sweet potato cubes can also be reheated on a baking sheet in the oven at 350 degrees F for about 10 minutes.
