These Peanut Butter Oatmeal Cookies are made with just 5 simple ingredients and are super easy to make! They are the perfect gluten-free & vegan treat.

Ingredients 

  • 1 ½ cups rolled oats*
  • 1 cup creamy peanut butter
  • ½ cup maple syrup
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees F and grease a cookie sheet or cover with parchment paper.
  • Add all of the ingredients to a food processor or high powered blender and pulse until combined, about 30 seconds-1 minute.
  • Using a spoon, ice cream or cookie scoop, scoop out about ¼ cup dough and roll into a ball (should be about the size of a golf ball).
  • Place the ball on the cookie sheet and to keep with traditional peanut butter cookie design, flatten with a fork, making criss-cross lines. Repeat with the remaining dough.
  • Bake for approximately 15 minutes. Let cool and enjoy!

*NOTE: use gluten-free oats if needed. Oats are naturally gluten-free but are sometimes processed with other grains, so be sure the package says gluten-free if you have sensitivities.
