Preheat the oven to 350 degrees F and grease a cookie sheet or cover with parchment paper.
Add all of the ingredients to a food processor or high powered blender and pulse until combined, about 30 seconds-1 minute.
Using a spoon, ice cream or cookie scoop, scoop out about ¼ cup dough and roll into a ball (should be about the size of a golf ball).
Place the ball on the cookie sheet and to keep with traditional peanut butter cookie design, flatten with a fork, making criss-cross lines. Repeat with the remaining dough.
Bake for approximately 15 minutes. Let cool and enjoy!
