Raspberry Oatmeal Bars

Crust
- 1 cup rolled or quick cook oats
- 1 cup oat flour, all-purpose flour or gluten-free flour
- ⅓ cup maple syrup
- ½ cup coconut oil melted and cooled
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ teaspoon salt
Filling
- 2 cups fresh or frozen raspberries
- 2 tablespoons maple syrup
- ½ lemon juiced
Crust
Preheat the oven to 350 degrees F and grease an 8x8 square baking pan with cooking spray.
In a bowl, add all of the crust ingredients and mix everything until combined.
Press the crust into the bottom of the pan, saving about ⅓ cup for the topping.
Filling
If using frozen raspberries, melt them in a microwave-safe bowl for 1-2 minutes until defrosted.
Add 2 tablespoons of maple syrup and the juice from ½ of a lemon to the bowl. Use a potato masher or fork to mash the berries and mix the filling.
Pour the raspberry filling over the crust.
Crumble the remainder of the topping evenly over top of filling and bake for 30-40 minutes or until golden brown.
Let cool for a few minutes, cut into squares and enjoy!
- Use parchment paper to ensure the bars don't stick to the pan and can be removed easily.
- To keep the bars fresh, store them in an airtight container in the fridge for up to 5 days.
- The raspberry crumble bars can also be frozen for about 2 months.
- Let the bars cool completely before cutting them or they may crumble more easily.
