Air Fryer Chicken Quesadillas

These Air Fryer Chicken Quesadillas are filled with chicken, fajita veggies, and gooey cheese. Serve as a delicious appetizer or an easy dinner at home the whole family will love.

Equipment

Ingredients

  • 1 yellow onion diced
  • 1 bell pepper diced
  • 2-3 cups rotisserie or other pre-cooked chicken
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 ½ teaspoons paprika
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 3 (8-inch) tortillas
  • 1 cup grated cheese Mexican blend, cheddar, Monterey Jack, etc.
  • Olive oil spray

Instructions

  • Preheat the air fryer to 425 degrees F.
  • Cook the diced onion and pepper in a skillet over medium heat for 3-4 minutes.
  • Add the chicken to the pan with the spices and cook for another 3-4 minutes.
  • Place tortillas on a flat surface and sprinkle a bit of cheese on half of each tortilla, divide the filling among each tortilla and top with more cheese. Fold each tortilla in half and press down gently but firmly.
  • Spray the air fryer basket or tray with olive oil spray.
  • Air fry the quesadillas for 3 minutes. Then flip each tortilla and bake for another 3-4 minutes until crispy and the cheese is melted.
  • Serve with pico de gaillo, guacamole and hot sauce. Enjoy!

Notes

  • Grate your own cheese. Instead of buying pre-shredded cheese, opt for grating it yourself from a block of cheese. Pre-shredded cheese is made with an anti-caking agent to help prevent the cheese shreds from sticking together which prevents the cheese from melting as well as it would without the anti-caking agent. Grate the cheese yourself for the best melted quesadillas.
  • Test how pliable your tortillas are. If you use flour tortillas, they should fold easily without any ripping. If you use a gluten-free tortilla or another "healthier" kind of tortilla, it may rip when folding if it is not warmed up first. Check if you need to warm up your tortillas first before filling to prevent any rips!
