Season the cut butternut squash with olive oil, salt and black pepper. Cook on a sheet pan or in the air fryer for 15 minutes or until tender. Set aside.
Prepare the quinoa according to the package directions. Once cooked, turn off heat and fluff with a fork.
Prepare the homemade lemon dijon vinaigrette.
Once the quinoa is cooled, add the squash, cranberries, feta and chopped parsley to the bowl.
Pour the dressing on top and mix the salad together. Serve and enjoy!
