What are hasselback potatoes?
The name Hasselback comes from the restaurant Hasselbacken in Sweden where they were first served. Hasselback is a cooking method in which potatoes or other types of food such as chicken breasts are sliced in thin, even layers but not all the way through. If you love crispy potatoes, you will love these air fryer Hasselback potatoes. Crunchy on the outside and soft in the middle, the perfect combo! The air fryer cooks these potatoes quicker than the oven so you can have dinner done sooner. Serve these potatoes with my Air Fryer Chicken Sausage for a complete meal!

Ingredients
- Potatoes. I like to use russet potatoes but Yukon gold potatoes will also work for this recipe.
- Olive oil. If you prefer, you can also use melted butter or another type of oil.
- Herbs. Any fresh herbs will work here; parsley, thyme and rosemary are all great options.

Variations
- Add slices of cheese in between the potato slices with about 5 minutes of cooking time left. Cheddar, mozzarella and cheddar jack are all delicious options. You can even sprinkle parmesan cheese on top after cooking.
- Add some toppings. Bacon, tomatoes, guacamole, or queso on top make for a delicious loaded potato.
- Use different spices, such as chili powder, smoked paprika or Italian seasoning. Switch it up depending on what you are serving these with.
Instructions
Step 1: Cut the potatoes into thin slices, stopping before you cut through the potatoes. I recommend slices ¼-inch in width.
Step 2: Brush the olive oil and herb mixture over the potatoes and in between the slices. Don't forget to get in between the slices as far as you can go! Place the potatoes in a single layer in the air fryer and cook until tender and golden. Let cool for a few minutes and serve.
How to cut hasselback potatoes
Place two chopsticks on a cutting board and place a potato on top. Slice thinly into ⅛-1/4-inch slices. The chopsticks will prevent you from cutting through the potato. (See how to cut hasselback potatoes here).
Sarah's Top Tips
- I highly recommend using russet potatoes for this recipe. Golden or red potatoes will also work but russet potatoes will be much crispier.
- If you want more flavor or crispiness, save some olive oil and spice mix and baste the potatoes halfway through their cooking time.
- To speed up the cooking time, pre-cook the potatoes in the microwave for 5 minutes then air fry the potatoes for about 20 minutes.
- Store leftover hasselback potatoes in an airtight container in the fridge for about 3 days. You can reheat in the air fryer or oven at 350 degrees F for 5-10 minutes.
Serving
Serve hasselback potatoes as a side dish with any protein of choice such as air fryer ribeye, baked chicken legs, cast iron pork chops or simple chicken burgers.

Ingredients
- 2 medium-sized russet potatoes
- 2 tablespoons olive oil or melted butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons herbs of choice (parsley, thyme, rosemary, etc.), finely chopped
Instructions

- Preheat the air fryer to 350 degrees F.
- In a small bowl, combine the oil or butter, salt, pepper, garlic powder and herbs. Brush the mixture over the potatoes and in between the slices.
- Place the potatoes in the air fryer and cook for 30-40 minutes until tender and golden. Let cool for a few minutes and serve. *Check the potatoes at 20 minutes and brush with more olive oil if needed.
